Zesty Mediterranean Salsa
Ingredients:
- 1 cup sun-dried tomatoes (dry) – Soaked in 2 cups of water overnight, then strained and finely chopped (you can use in oil if you prefer)
- ½ or 1 ripe mango, finely chopped
- 6 cherry tomatoes, chopped
- ½ cup green olives, chopped
- 1 green onion, thinly sliced
- 2 garlic cloves, minced
- 1 small hot pepper, finely chopped (adjust to taste)
- Handful of fresh parsley, chopped
- Juice of ½ lime
- ½ teaspoon sea salt
- 1 tablespoon balsamic vinegar
- 1/4 to 1/3 cup olive oil ( I used 1/3 cup but you can use less.
Directions:
- Prepare the sun-dried tomatoes by soaking them overnight in 2 cups of water. The next day, strain them and chop into small pieces. You can also do quick soak by using hot water and soak for an hour.
- Finely chop all remaining fresh ingredients.
- In a medium bowl, combine everything: tomatoes, mango, olives, garlic, herbs, lime juice, and balsamic.
- Drizzle in olive oil and season with salt.
- Stir to combine well. Let it sit for 10 minutes so the flavors meld or enjoy right away.
- Serve on crackers, fresh baguette slices, or as a vibrant salad topper.
