Zesty Mediterranean Salsa

Ingredients:

  • 1 cup sun-dried tomatoes (dry) – Soaked in 2 cups of water overnight, then strained and finely chopped (you can use in oil if you prefer)
  • ½ or 1 ripe mango, finely chopped
  • 6 cherry tomatoes, chopped
  • ½ cup green olives, chopped
  • 1 green onion, thinly sliced
  • 2 garlic cloves, minced
  • 1 small hot pepper, finely chopped (adjust to taste)
  • Handful of fresh parsley, chopped
  • Juice of ½ lime
  • ½ teaspoon sea salt
  • 1 tablespoon balsamic vinegar
  • 1/4 to 1/3 cup olive oil ( I used 1/3 cup but you can use less.

Directions:

  1. Prepare the sun-dried tomatoes by soaking them overnight in 2 cups of water. The next day, strain them and chop into small pieces.  You can also do quick soak by using hot water and soak for an hour. 
  2. Finely chop all remaining fresh ingredients.
  3. In a medium bowl, combine everything: tomatoes, mango, olives, garlic, herbs, lime juice, and balsamic.
  4. Drizzle in olive oil and season with salt.
  5. Stir to combine well. Let it sit for 10 minutes so the flavors meld or enjoy right away.
  6. Serve on crackers, fresh baguette slices, or as a vibrant salad topper.
