I love summer because of all the fresh produce from the farmer's markets and your own garden. Every year my veggie garden is getting bigger and bigger. (LOL) I'm totally obsessed with growing more every year. I hardly buy produce from the store in the summer and I love that. Not only that you save money but you also eating the healthiest, freshest (not sprayed) veggies ever. Once you try growing your own you never stop. Nothing beats the flavour of the freshly picked veggies and never mind all the amazing nutrients that are full of. Here is a beautiful summer salad made with most of my garden veggies, lettuce, watermelon radishes, and dill. The rest was from the farmer's market. So fresh, and delicious with very light avocado dressing.

Watermelon Radish Salad with Avocado Dressing

Serves: 2
Total time: 10 min

Ingredients:

  • 1 had of lettuce (butter or romaine) ripped into small pieces
  • 1/2 cucumbers sliced
  • 6 cherry tomatoes sliced
  • 1/2 small red onion sliced
  • ½ yellow bell pepper
  • 5 watermelon radishes or regular
  • Dill for garnishing

Dressing:

  • ½ medium size avocado
  • 1 cup water
  • ½ lemon juiced
  • 1 tsp honey
  • 1-2 garlic cloves minced
  • ½ tsp sea salt or to taste
  • ½ tsp black pepper

Direction:

  1. In the medium, large bowl place all the salad ingredients, set aside.
  2. In the blender place all the dressing ingredients and blend until smooth and creamy.
  3. Pour some of the dressing over your salad and enjoy. The rest of the dressing you can store in the glass jar in the fridge for up to 3 days.
