Watercress is lately on top of my list for salads. Have you ever tried watercress? It has a unique flavour, fresh and kind of grassy tasting. For some people it might be strong in taste and for others is just fresh tasting. It can definitely, be very strong on its own but when you add the dressing it takes the watercress salad to the next level with all the fresh herbs and spices. There is so much flavour in this vibrant salad and I hope you give watercress a try.

These beautiful greens are known to be the oldest leaf vegetable consumed by humans. It is a perennial plant native to Europe and Asia. I thought that was pretty cool to know.

Watercress Salad with Avocado Zucchini Dressing

Yield: 2-4 servings
Prep time: 15 mins
Total time: 15 mins

Ingredients:
1 bag of watercress greens washed
1 cup cherry tomatoes cut in half or sliced
1 yellow bell pepper chopped
1/2 red onion sliced
1 cup any sprouts you like (optional)

Dressing:
1/2 half medium zucchini chopped
1/4 avocado
1/2 cup water
1/2 lime squeezed
1/2 tsp onion powder
2 medjool dates pitted
1 garlic clove
1 Tbsp pesto sauce vegan
salt pepper to taste

Directions:

In the medium bowl put together all the salad ingredients.

For the dressing place all the ingredients in the high-speed blender and blend on high until smooth.

Pour over your salad and enjoy!
