Who’s ready for a taste of the tropics? I made these incredible Tropical Mango-Cashew Energy Balls using the leftover pulp from my homemade mango-cashew milk, and they’re SO dreamy! 

First, I whipped up a deliciously creamy tropical milk in my Nama M1 Milk Maker in just under 2 minutes—cashews, mango, coconut, vanilla, a touch of maple syrup, a pinch of salt, and water. It turned out AMAZING!

Then, I used the leftover pulp to make these no-bake, chocolate-coated energy balls that are perfect for a quick snack or a post-workout treat! Just process the pulp with oats, coconut, dates, and a hint of salt, roll into balls, coat in chocolate, and finish with a sprinkle of coconut.  These tropical treats are perfect for an energy boost and bring a little island vibe to your day! 

Tropical Mango Cashew Milk

Ingredients:

  • 1 cup cashews
  • 1/2 mango (fresh only)
  • 1/3 cup coconut shreds
  • 1/2 tsp vanilla extract
  • 1 tbsp maple syrup
  • Small pinch of salt
  • 4 cups water

Instructions:

  1. Add all ingredients to Nama M1 milk maker and blend.
  2. Enjoy immediately or store in the fridge for up to 3 days because its with fresh fruits.
  3. Save the leftover pulp for the energy balls below!

Tropical Mango Cashew Energy Balls 

Ingredients:

  • Leftover pulp from mango cashew milk
  • 1 cup rolled oats
  • 1/3 cup coconut shreds
  • 8 pitted Medjool dates
  • Small pinch of salt
  • 1/2 cup chocolate chips (optional, for coating)
  • Extra coconut shreds (for topping)

Instructions:

  1. Place the milk pulp, oats, coconut shreds, dates, and salt in a food processor.
  2. Process until well combined and the mixture is sticky to the touch.
  3. Roll about 1 tablespoon (or more) of dough into balls and place on a tray lined with parchment paper.
  4. Refrigerate for 1 hour or overnight.
  5. If desired, melt the chocolate chips in a bowl and coat each ball, then sprinkle with extra coconut shreds.
  6. Let the chocolate set in the fridge, or simply enjoy as is for a chocolate-free option!
  7. If using chocolate for coating place the chocolate chips in a microwave-safe bowl and microwave for 30 seconds. Stir the chocolate chips and microwave for another 30 seconds or use double boiler on the stove.
