My Sweet Almond Cookies are an easy and delicious recipe to make, and best of all, they are both gluten-free and dairy-free, refined sugar and oil-free. Soft and chewy with an amazing hit of almond flavor. These are definitely the number 1 cookies everyone in my family and friends asks for. The cookies are very simple to make; to the degree that I believe they are foolproof.

Sweet Almond Cookies

Yields; 15 cookies

Total time: 25 min

Ingredients:

Directions:

  1. Preheat the oven to 350F. Lined the baking tray with parchment paper. By doing so there is no need for oil and it's an easy clean-up.
  2. In the bowl mix, oat flour, almond flour, baking powder, and a pinch of salt. Mix until combined, then add maple syrup, almond extract, and unrefined coconut oil. Fold and combine well and cover with plastic wrap. Let it rest in the fridge for 10 min for the oil to harden so the cookies don't spread too much.
  3. Remove from the fridge and start by scooping 1 tbsp of the dough and rolling into a ball. Here you can add almonds or pecans on top by just pressing the nut into the dough for decoration or you can omit it altogether.
  4. Bake in the oven for 10 minutes, then remove and let it rest on the tray for 5 minutes before transferring to a cooling rack to cool completely. They will be soft at first when you take them out but they will harden a little. So let them cool completely. Enjoy!

Tips:

  • If you store them in the fridge or freezer they will harden but they will still be delicious.
  • You can store them in the air tight container for up to 2 weeks if they last.
