Superfood Overnight Oats (Vegan, Healthy, and Easy!)
Total time: 5 minutes
Ingredients:
- ½ cup rolled oats (I used gluten-free)
- 1 tbsp chia seeds
- 1 tbsp hemp seeds
- 1 tsp flaxseed
- Dash of cinnamon
- 1 tbsp elderberry syrup (or maple syrup/agave optional)
- 1 cup plant-based milk (almond, oat, soy or coconut — your choice)
- Toppings: Chopped strawberries and mango
Directions:
- In a jar (16 oz) or bowl, combine oats, chia seeds, hemp seeds, flaxseed, and cinnamon.
- Stir in elderberry syrup and plant-based milk. Mix well.
- Top with chopped strawberries and mango. I used 2 strawberries and 1/4 of a mango for each.
- Cover and refrigerate overnight (or at least 4–8 hours).
- Enjoy cold, or let it sit at room temp for 5–10 minutes if you prefer it slightly warmer.
