This is one of my go-to recipes when I want something easy, satisfying, and good for my body. It’s made with just a few pantry staples and finished with fresh fruit like mango and strawberries, which give it a naturally sweet, refreshing flavor.

Superfood Overnight Oats (Vegan, Healthy, and Easy!)

Total time: 5 minutes

Ingredients:

  • ½ cup rolled oats (I used gluten-free)
  • 1 tbsp chia seeds
  • 1 tbsp hemp seeds
  • 1 tsp flaxseed
  • Dash of cinnamon
  • 1 tbsp elderberry syrup (or maple syrup/agave optional)
  • 1 cup plant-based milk (almond, oat, soy or coconut — your choice)
  • Toppings: Chopped strawberries and mango

Directions:

  1. In a jar (16 oz) or bowl, combine oats, chia seeds, hemp seeds, flaxseed, and cinnamon.
  2. Stir in elderberry syrup and plant-based milk. Mix well.
  3. Top with chopped strawberries and mango.  I used 2 strawberries and 1/4 of a mango for each. 
  4. Cover and refrigerate overnight (or at least 4–8 hours).
  5. Enjoy cold, or let it sit at room temp for 5–10 minutes if you prefer it slightly warmer.

💡 Tips & Variations

  • Switch up the fruit: Try blueberries, banana, or kiwi depending on the season.
  • Add nut butter: A spoonful of almond or cashew butter makes it even creamier.
  • Make it in batches: Meal prep 2–3 jars at a time for grab-and-go breakfasts.
