Who here is obsessed with mango as much as I am? If I had to choose one fruit on this planet, mango will be definitely on top of my list. I love it on salads, in smoothies, wraps, desserts, I'm drooling just thinking about it (haha). Ok, this salad in my opinion is so delicious that I can pretty much eat it all by myself as a meal but I have to share it with my beautiful family. This is a very simple salad and the dressing is creamy, low fat, and the easiest dressing you will ever make. Simple is the best! Salads should be very simple yet scrumptious.

Summer Mango Salad

Yield: 2-4
Prep time: 15 min
Total time: 15 min

Ingredients:

1 leaf lettuce head (rip into small pieces)
1 cup spinach
1 cup cherry tomatoes sliced
1/2 cucumber chopped or sliced
1 mango chopped
2 green onions chopped
A sprinkle of mixed seeds. I hand hemp seeds and sunflower seeds.

Dressing Ingredients:
Makes: 1 1/2 cup of dressing

  • 1 cup water
  • 1 mango peeled and chopped
  • 1/4 of avocado
  • 1 tbsp lemon juiced
  • Salt and black pepper to taste

Direction:

  1. Prepare and place all the salad ingredients in the large bowl.
  2. Make the dressing by combining the first 4 ingredients in the blender. Blend until very smooth, then add salt and black pepper to taste. If you find it too thick, you can add more water 1 tbsp at a time. Pour it over the salad and enjoy!

Tips:

  1. The thickness of the dressing makes the salad very creamy and scrumptious. I recommend not to water down to much.
  2. Believe me, this simple dressing is so good that once it is mixed with all the salad ingredients you won't need much of anything else.
  3. It stores well for two days in the fridge.
