I love stepping into the garden to pick up some fresh greens for my salad. Nothing beats the freshness, flavor and all the high quality of nutrients that you get from your own produce. We also love going to picked up some fresh strawberries every year from the farm which we did the other day. The moment we got home; I couldn't wait to make this strawberry salad. This beautiful and very flavorful salad is so refreshing and delicious. The Strawberry dressing is the highlight of the salad as it makes it so fresh and very summery. Perfect for the summer hot days.

Strawberry Green Salad

Ingredients

Salad Ingredients:

  • 1 or 2 heads of butter lettuce ripped into pieces
  • 1 1/2 cup fresh strawberries (cut in half or sliced)
  • 1 cup arugula
  • 1 medium cucumber (juvenile into noodles or sliced)
  • 1 small red onion sliced
  • 8 green olives
  • 1/4 cup green onion chopped
  • 2 tbsp fresh basil chopped
  • Sprinkle of black, white sesame and pumpkin seeds for garnish.

Dressing Ingredients:

  • 1 cup fresh strawberries
  • 1 tbsp Avocado
  • 1 tbsp tahini (sesame paste)
  • 1 garlic clove minced
  • 1/2 lemon juiced
  • 1/4 cup water
  • 1/4 salt or to taste
  • 1/8 black pepper or to taste

Directions:

  1. Place all the ingredients for the dressing in the blender and process until very smooth and creamy. If you want the dressing thinner just add water by 1 tbsp at a time to get the consistency that you desire.
  2. In the large bowl place all the salad ingredients. You can juvenile the cucumber into noodles and just roll each cucumber to achieve the look I have in my bowl or you can slice them instead.
  3. Next pour the dressing over the salad and combine. Enjoy!
