If you told me years ago that one of my creamiest, most decadent chocolate desserts would be made from tofu… I would have laughed. But here we are — and this rich, velvety chocolate mousse has become a weekly tradition in my kitchen!

It takes just five simple ingredients, blends up in minutes, and chills into the perfect airy, whipped texture. No dairy, no refined sugar, no mystery ingredients — just wholesome goodness from tofu, peanut butter, dark cacao, and naturally sweet Medjool dates. You can enjoy it after two hours in the fridge, but overnight? That’s when the magic happens.

Ingredients

• 150 g soft tofu
• 2 tbsp peanut butter (use 1 tbsp more for extra peanut butter flavor)
• 1 tbsp cacao powder
• 4 to 5 large Medjool dates, pitted
• 1 tsp vanilla extract or vanilla paste
• 2 tbsp water

Instructions

1.  Add all ingredients to a high-speed blender.
2. Blend until completely smooth and creamy, scraping down the sides if needed.
3. Transfer to a jar or serving glasses.
4. Chill in the fridge at least 2 hours, or overnight for best texture.
5. Add toppings if you like — shaved dark chocolate, or berries.

Storage

Keep tightly covered in the fridge for up to 3 days.
Not freezer-friendly (texture changes).
