Red Cabbage and Kale Salad
Ingredients:
- 4 kale leaves, stems removed, chopped
- ½ red cabbage, finely sliced (or use green cabbage)
- 2 green onions, chopped
- 2 apples, diced (add last to prevent browning)
- ¼ cup dried cranberries
- ¼ cup walnuts or pecans
- Sprinkle of pomegranate seeds
- Salt (for massaging kale and cabbage)
Dressing:
- ¾ cup olive oil
- ¼ cup balsamic vinegar
- Juice of ½ lemon
- 1 tsp dijon mustard
- 2 tbsp honey or maple syrup
- 2-3 garlic cloves, minced
- Salt and pepper to taste
- 1/8 cup water
Instructions:
