This chickpea salad is made up of just a few simple ingredients that you probably already have in your pantry. You will need a can of chickpeas, millet, some diced tomatoes, diced cucumber, diced red onion, and a few tablespoons of olive oil, lemon, garlic and maple syrup for dressing. That’s it! Easy peasy.

Makes 3 (32 ounce) mason jars.
Ingredients
Lemon Dressing Ingredients:
- 3 tbsp olive oil
- 1 lemon juiced
- 1 tsp maple syrup
- 2 garlic cloves minced
- 1/2-1 tsp salt
- Black pepper to taste
- Divide the dressing equally into the jars by tablespoon.
Salad Ingredients:
- 2 cups cherry tomatoes chopped (add 1/2 cups into a jar)
- 1 English cucumber chopped (add 1/2-1 cup into a jar)
- 1/2 red onion chopped (add 1/3 cup into a jar)
- 15 oz can chickpeas or cooked (add 1/2 cup chickpeas into a jar)
- 1 cup dry millet grain yields 3-4 cups cooked (add 1 cup cooked millet into a jar)
- Cook according to the package direction.
- Handful parsley or Cilantro
- Handful romaine lettuce
- Optional: you can add 1 tbsp hemp seed into each jar.
Directions:
- Once you have all your ingredients ready, it’s time to start making the salad.
- Add the dressing into each jar by the tbsp. Next add chopped tomatoes, cucumbers, red onion, chickpeas, millet, cilantro or parsley and romaine lettuce..
- That’s it – your delicious chickpea salad is ready!
- Cover and refrigerate for up to 4 days. For serving, invert the jar and shake over a medium bowl. Mix well. Add more lemon, salt and pepper if you wish.
