As the leaves start to change color and fall gently to the ground, there's only one thing on our minds: pumpkin everything. And what goes better with pumpkin than chocolate? Our pumpkin chocolate chip cookies are soft, easy to make, and absolutely delicious. But the best part about them is that they're completely guilt free!

These cookies are oil free, gluten free, and made with no refined sugar, so you can indulge in as many as you want without feeling an ounce of guilt. Whether you're enjoying them as a midday snack or using them to fuel your next workout, these cookies are perfect for any time of day. Pumpkin Chocolate Chip cookies

Makes 10 cookies
Prep time: 10 min
Bake time: 10 min
Total time: 20 min

Ingredients:

  • 1/2 cup shredded pumpkin
  • 1/2 cup Canned coconut milk 20% fat
  • 1/2 cup maple syrup
  • 1 tsp vanilla extract

Dry ingredients:

  • 2 tsp pumpkin pie spice
  • 1 1/3 cup oat flour
  • 1 tsp baking powder
  • 1/3 cup chocolate chip

Direction:

  1. Preheat the oven to 350F. Line tray with parchment paper.
  2. Place the first 4 ingredients in the blender and process until smooth if you are using shredded pumpkin.
  3. If you are using pumpkin puree then you can do it all in one bowl. Mix the first 4 ingredients then add the rest of dry ingredients. Mix until well combine. Add the chocolate chips and mix. Scoop the batter into a baking tray. I use medium large cookie scoop. They will spread so make sure to give them a little space on the tray like the picture above.
  4. Bake for 10 min.
  5. Remove and let the cookies cool down completely. Enjoy.
