Protein-Packed Peanut Banana Popsicles Recipe:

Ingredients:

  • 1 cup of your vanilla yogurt (plant-based)
  • 1/4 cup natural peanut butter or any nut butter you prefer 
  • 1/4 cup maple syrup or agave
  • 1 ripe banana, chopped

Instructions:

  1. Mix: In a bowl, combine yogurt, peanut butter, maple syrup (or agave), and banana until smooth.
  2. Form: On a parchment-lined tray, spoon about 2 heaping tablespoons of the mixture into a mound. Flatten slightly. Insert a popsicle stick into each.  Parchment paper helps from sticking to the surface. 
  3. Top: Sprinkle with chopped nuts—hazelnuts, peanuts, almonds, or whatever you love.
  4. Freeze: Place in the freezer for at least 1 hour, or until completely frozen.
  5. Chocolate drizzle: In a double boiler or microwave, melt 1/4 cup chocolate chips with 1 tbsp coconut oil until smooth. Drizzle generously over your frozen pops.
  6. Store in the freezer for up to 1 month in airtight container.
