What I love most about this recipe is what happens while it rests.

When you first assemble the cake, the apples are still crisp and fresh. But after a few hours in the refrigerator, they begin to soften and absorb that cinnamon-spiced date caramel. By the next day, the texture changes even more. The apples become tender and almost taste as though they’ve been baked.

And the ingredients couldn't be simpler: apples, dates, almonds, lemon, and spices.

The crust is just almonds and Medjool dates, and the creamy caramel that coats the apples is naturally sweetened entirely with dates.

This is also one of those desserts I love making ahead of time because it actually gets better as it sits. Make it in the evening, leave it covered in the refrigerator overnight, and the next day you have a beautiful raw apple cake ready to slice and share.

No Bake Caramel Apple Cake

Ingredients

Almond-Date Crust

Apple Filling

  • 9 apples peeled and sliced with knife or mandoline

Spiced Date Caramel

  • 2 cups pitted Medjool dates
  • 2 tablespoons ground cinnamon
  • ⅛ teaspoon ground cloves
  • ⅛ teaspoon ground nutmeg
  • ⅛ teaspoon ground cardamom
  • Pinch of salt
  • Juice of ½ lemon
  • 1/2 cup water, if you find it thick add extra 1 tbsp at a time

If your dates are dry: Soak them in hot water for approximately 30 minutes, then drain before using.

    Directions:

    1. Prepare the Pan.  Line the bottom of a springform pan with parchment paper. A springform pan works best because the sides can be released once the cake has chilled and set.

    2. Make the Almond-Date Crust.  Add the almonds to a food processor and pulse about 3 times, or until they are broken into smaller pieces. You want them finely chopped but not turned completely into almond flour.

    Add 1 1/2 cups of pitted Medjool dates and process again until the mixture begins to stick together.  Test the mixture by pressing a little between your fingers. If it holds together, it's ready. Transfer the mixture to the prepared springform pan.  Using your hands, press the crust firmly and evenly over the entire bottom of the pan. Set aside while you prepare the apples.

    3. Prepare the Apples.  Peel the apples. Slice the apples relatively thinly using a sharp knife or mandoline. Don't slice them paper-thin—you want them thin enough to soften but sturdy enough that they don't fall apart when mixed with the caramel. 

    Do not worry if they do break a little, it will be blended with caramel and pressed. Place the sliced apples into a large bowl.

    4. Make the Spiced Date Caramel.  Add the 2 cups of Medjool dates, cinnamon, cloves, nutmeg, cardamom, salt, water and lemon juice to a high-speed blender.

    Begin blending and gradually add water if needed.  The finished mixture should resemble a thick caramel sauce rather than a thin dressing.  A high-speed blender such as a Vitamix works especially well for this step.

    Using a food processor instead? Process the dates and other ingredients first, then add water 1 tablespoon at a time while processing. Avoid pouring a large amount of water into the food processor at once, as it can leak or splash.  Trust me, I have learned from my experience. 

    5. Reserve Some Caramel.  Once the date caramel is completely smooth, remove approximately ½ cup and set it aside. You'll use this for the top of the cake.

    6. Coat the Apples.  Pour the remaining date caramel over the sliced apples.

    Gently toss everything together until every apple slice is coated. I find that using clean hands makes this especially easy because you can gently separate the slices and make sure the caramel gets between all the layers.

    7. Assemble the Cake.  Transfer the caramel-coated apples onto the prepared almond-date crust.  As you add the apples, gently press them down with your hands. This is important because you want to eliminate large gaps between the apple slices and create a compact cake that will hold together better once chilled.

    Continue until all the apples have been added, then gently press the entire surface once more.

    8. Add the Caramel Topping.  Spread the reserved ½ cup of date caramel over the top of the apples. You can leave it rustic or smooth the surface with the back of a spoon or spatula.

    9. Refrigerate.  Cover the cake and refrigerate for at least 5 hours.  For the very best flavor and texture, refrigerate it overnight.  As the cake rests, the apples soften and absorb the cinnamon-spiced caramel. This is what gives them that surprisingly tender texture that almost reminds me of baked apples.

    10. Serve.  When you're ready to serve, carefully release and remove the sides of the springform pan.  Slice and enjoy chilled.

    Do I have to use Medjool dates?

    Medjool dates are my favorite because they're naturally soft, moist, and caramel-like. Other dates can work, but if they're dry or firm, soak them in hot water for about 30 minutes and drain them before blending.

    Can I make this without a high-speed blender?

    Yes. You can make the caramel in a food processor. Process the dates, lemon, and spices first and then add the water 1 tablespoon at a time until you reach a creamy consistency.

    What kind of pan should I use?

    A springform pan is ideal because the outside ring releases from the base. A traditional cake pan would make this soft raw cake much harder to remove.

    How thin should I slice the apples?

    Thin, but not paper-thin. You want the slices to soften as they sit in the caramel while still maintaining enough structure to create visible layers.

    Can I eat it immediately?

    You can, but I wouldn't recommend it if you want the best result. Give it at least 3–5 hours in the refrigerator. Overnight is the best. The resting time allows the apples to soften and absorb the flavors.
