Lemon Coconut Truffles

Ingredients:
Wet
- 3 tbsp honey liquid
- 4 tbsp coconut oil solid but melted
- 3 tbsp lemon juiced
- zest of the whole lemon
- 1 tsp vanilla extract
Dry
- 3/4 cup almond flour
- 1/2 cup coconut flour
- 1/8 tsp turmeric
- pinch of salt
- 1/2 cup of shredded coconut for rolling the truffles (set a side)
Direction:
- In the bowl combine the wet ingredients first, mix well.
- Add the dry ingredients. Mix well, the dough will become thick, that's what you want.
- Place the dough in the freezer for 15 min or fridge for 30 min to harden a little.
- Remove the dough and use 1 tsp of dough and roll into a ball. They will be small, it yields 22 balls.
- In the bowl place shredded coconut and roll the balls to cover the surface, this is optional but it makes it look pretty and it adds texture and deliciousness.
- Store them in the freezer for up to a month if they last.
