Ingredients
- 1 cup mango frozen or fresh
- 1 cup can coconut cream the thick stuff (I used this one)
- 1/4 cup maple syrup
- Melted chocolate
- 1/2 bag chocolate chips I use vegan
- 1 tbsp coconut oil
Direction:
- Start by blending one cup of mango, one cup of coconut cream, and 1/4 cup of maple syrup in a blender until they are smooth. Pour the mixture into your popsicle molds (four small ones will do the trick) and freeze them for at least four hours or overnight. Once the popsicles are frozen, remove them from the mold and prepare the melted chocolate.
- For the melted chocolate, combine half a bag of chocolate chips (I used vegan) and one tablespoon of coconut oil in a glass bowl. You can melt the chocolate over a double boiler or in the microwave. I personally prefer using a glass bowl and then transfer to a narrow glass for easy dipping. Once the chocolate is fully melted, it's time for the most fun part: dipping the popsicles!
- Dip each popsicle into the melted chocolate and then place it onto a piece of parchment paper so it won't stick. Allow the chocolate to harden, and voila!
