Herb Pesto is healthy and delicious! The perfect condiment for pasta, it can also be used as a salad dressing or even a dip. This pesto is full of flavor, made with fresh herbs, seeds, low in oil and only takes a few minutes to make. It is a great way to add tons of nutrients and flavor to your food. I also love putting it on my avocado toast.

Herb Pesto
Makes: 2 cups
Prep time: 5 min
Total time: 7 min
Ingredients:
- 1/2 cup raw sunflower seeds
- 1 cup water
- 1/4 cup lemon juice or lime
- 4 cloves garlic minced
- Add 2 tbsp olive oil (optional)
- 1 cup fresh oregano leaves
- 2 cups basil leaves
- 1 cup parsley chopped
- 1 cup Cilantro chopped
- 1 tsp sea salt
- black pepper to taste
Directions:
- Add the first 4 ingredients to the blender and process until well-broken down into somewhat of a paste, about 30 seconds or so.
- Add the rest of the ingredients and pulse until all is combined but still see a little of the texture of the herbs.
- Stores in the fridge for a week or two.
- Stir occasionally as the top might go darker but not to worry it's still good to eat.
Tip:
- You can omit the olive oil if you like.
