This is a healthy, flavorful and super easy way to use fresh herbs. It's so good you'll want to put it on everything from pasta to veggies!

Herb Pesto is healthy and delicious! The perfect condiment for pasta, it can also be used as a salad dressing or even a dip. This pesto is full of flavor, made with fresh herbs, seeds, low in oil and only takes a few minutes to make. It is a great way to add tons of nutrients and flavor to your food. I also love putting it on my avocado toast.

So why not give it a try? You won't be disappointed.

Herb Pesto

Makes: 2 cups
Prep time: 5 min
Total time: 7 min

Ingredients:

  • 1/2 cup raw sunflower seeds
  • 1 cup water
  • 1/4 cup lemon juice or lime
  • 4 cloves garlic minced
  • Add 2 tbsp olive oil (optional)
  • 1 cup fresh oregano leaves
  • 2 cups basil leaves
  • 1 cup parsley chopped
  • 1 cup Cilantro chopped
  • 1 tsp sea salt
  • black pepper to taste

Directions:

  1. Add the first 4 ingredients to the blender and process until well-broken down into somewhat of a paste, about 30 seconds or so.
  2. Add the rest of the ingredients and pulse until all is combined but still see a little of the texture of the herbs.
  3. Stores in the fridge for a week or two.
  4. Stir occasionally as the top might go darker but not to worry it's still good to eat.

Tip:

  • You can omit the olive oil if you like.
