Strawberry Rhubarb Crumble

Yields: 5 to 6 servings

Ingredients:

Base

  • 4 cups strawberries sliced in half or quarters depending on the size (remove leaves)
  • 1/2 stick Rhubarb if it's long, this one was 10 inches (chopped small )
  • 2 tbsp maple syrup
  • 2 tbsp arrowroot flour

Crumble

  • 1 cup oat flour ( I use gluten free oats and I process them in the blender for about 1 min until they resemble flour )
  • 1 cup rolled oats ( I use gluten free oats)
  • 1/3 cup unsweetened coconut shreds
  • 1 tsp cinnamon
  • 1/8 tsp sea salt
  • 1/4 cup avocado oil
  • 1/4 to 1/3 cup maple syrup
  • 2 tsp vanilla extract

Directions:

  1. Preheat the oven to 350 F.
  2. In the 9 inch round baking dish place the chopped strawberry, rhubarb, maple syrup, and arrowroot flour and mix well. Flatten the mixture with a spoon.
  3. In the glass bowl mix all the crumble ingredients, oat flour, rolled oats, coconut shreds, cinnamon, salt, oil, maple syrup and vanilla extract. Mix well until the mixture is sticky and spread over the strawberry and rhubarb mixture.
  4. Bake at 350 F for 40 minutes.
  5. Remove and let it cool down for 10 min before serving.
  6. Serve with ice cream or nice cream or just as is. Enjoy!

  • Serve the crumble warm with a scoop of vanilla ice cream for the ultimate summer dessert.
