No-Bake Brownie Bars (10-Minute Recipe)
Prep Time: 5 minutes. Total Time: 10 minutes (plus 30–60 minutes chilling)
Freezing Time: 30 minutes to 1 hour. Yield: 10–20 servings
Ingredients:
Brownie Layer
- 2 cups walnuts
- 2 cups pitted Medjool dates (about 13–14 dates)
- ½ cup hemp seeds
- ½ cup cacao powder
- 2 teaspoons vanilla extract
- 3 tablespoons maple syrup (optional or 2 tbsp water)
- Pinch of salt
Chocolate Topping
- ½ cup solid unrefined coconut oil (melted)
- ½ cup cacao powder
- ¼ cup maple syrup
- 1 teaspoon vanilla extract
Directions:
1: Process the Walnuts. Add the walnuts to a food processor and pulse several times. Be careful not to over-process—you want small pieces, not walnut butter.
2: Make the Brownie Dough. Add the pitted Medjool dates, hemp seeds, cacao powder, vanilla extract, maple syrup, and a pinch of salt.
Process until the mixture forms a sticky dough.
Taste and adjust sweetness if needed. If you prefer not to use maple syrup, simply omit it. You may need to add 1–2 tablespoons of water to help the mixture come together.
3: Press Into the Pan. Line an 8×8-inch baking dish with parchment paper.
Transfer the brownie mixture into the pan and firmly press it down until smooth and evenly packed. Place the pan in the freezer while you prepare the chocolate topping.
Prepare the Chocolate Topping
Melt the coconut oil in the pot. If using this method heat up the pot for 3 min and then take off the stove add the oil and it will melt easily. Microwave method. 20 second or more if needed and whisk together with:
- ½ cup cacao powder
- ¼ cup maple syrup
- 1 teaspoon vanilla extract
Mix until smooth and glossy.
Remove the brownie layer from the freezer and pour the chocolate topping evenly over the surface. Freeze. Return to the freezer for 30 minutes to 1 hour, or until firm. Slice into squares and enjoy!
Storage
Store these healthy no-bake brownie bars:
- In the refrigerator for up to 1 week.
- In the freezer for up to 3 months.
They taste amazing straight from the freezer and make the perfect make-ahead dessert. I like to put parchment paper in between the layers so they don't stick together.
Frequently Asked Questions
Can I make these without maple syrup?
Absolutely. The Medjool dates provide plenty of sweetness. If needed, add 1–2 tablespoons of water to help the mixture stick together.
Can I use another nut?
Yes. Pecans, almonds, or cashews will also work, although walnuts give these bars their wonderfully rich brownie texture and omega 3s. You can also leave out the hempseeds if you prefer no seeds and replace them with more walnuts or almonds.
Do I need to bake them?
No! That's what makes these bars so easy. There is absolutely no baking required.
Can I substitue the conconut oil with another oil?
Yes, I would recommend cacao butter it will add unbelievable flavor but its a little on expensive site. Just make sure to melted first.
