Healthy Flourless Chickpea Blondies | High-Protein Vegan Blondies
Prep Time: 5 minutes Bake Time: 40 minutes. Cooling Time: 20 minutes. Total Time: 65 minutes. Makes: 9 large blondies
Ingredients:
- 1 (540 ml) can chickpeas, drained and rinsed
- 2 ripe bananas peeled
- ½ cup smooth peanut butter
- ¼ cup pure maple syrup
- 2 teaspoons vanilla extract
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- Pinch of sea salt
- 1/2 cup chocolate chips(set some aside for toppings)
Direction:
- Preheat your oven to 350°F (175°C).
- Line an 8x8-inch baking pan with parchment paper.
- Add all ingredients to a a bowl and use immersion hand blender or food processor.
- Blend until completely smooth.
- Add the chocolate chips and mix with a spoon until combine.
- Spread evenly into the prepared pan. Sprinkle some of the chocolate chips on top.
- Bake for 40 minutes.
- Allow the blondies to cool in the pan for about 10 minutes.
- Carefully lift them out using the parchment paper.
- Let cool completely before slicing about 20 to 30 min.
- Slice into 9 large blondies or 12 smaller bars.
Storage Tips
Store in an airtight container in the refrigerator for up to 5 days. These blondies also freeze beautifully for up to 3 months. Simply thaw at room temperature or warm for a few seconds before serving.
