Fresh & Crunchy Detox Cabbage Salad

Ingredients:

  • ¼ green cabbage, finely shredded
  • ½ pomegranate, deseeded
  • 1 red bell pepper, finely diced
  • 1 apple (any variety), diced(best to do it just before putting the dressing, otherwise it will brown)
  • 1 English cucumber, diced
  • 4–5 green onions, chopped (green parts only)
  • Handful of fresh basil, chopped
  • Handful of fresh mint, chopped

Creamy Garlic Cashew Dressing:

  • ¼ cup cashew butter
  • ½ cup water or more to your desired consistency 
  • 2 garlic cloves, minced
  • ½ lemon, juiced
  • ½ tsp salt
  • ¼ tsp Dijon mustard (optional)
  • Instructions:
  1. Blend all dressing ingredients until smooth in the blender or by hand.
  2. Pour over the chopped veggies and herbs.
  3. Toss well to coat everything evenly.
  4. Serve immediately or let it sit in the fridge for an hour to let the flavors meld. Enjoy!
