What Is Chimichurri?

Chimichurri originated in Argentina and Urguay, where it’s traditionally served as a sauce or marinade for grilled meats. It’s a staple in South American cooking — much like pesto in Italy — and is known for its bright green color and tangy herbaceous flavor.

In Argentina, it’s often spooned over steak or used to marinate vegetables before grilling. Over the years, many versions have emerged across Latin America, each with its own twist.

My version keeps the authentic spirit of chimichurri but gives it a plant-powered, healing twist by adding more fresh herbs and clean ingredients — no refined oils or additives, just pure goodness.

Easy Homemade Chimichurri Recipe

Ingredients:

  • 1 cup fresh parsley chopped, loosely packed, stems removed
  • ½ cup fresh oregano chopped, stems removed
  • 2 sprigs fresh mint chopped, stems removed
  • 4 garlic cloves, minced
  • 1 fresh cayenne pepper chopped (or ¼ tsp red pepper flakes)
  • ½ tsp sea salt, or to taste
  • 2 tbsp apple cider vinegar (or white vinegar)
  • ⅓ cup extra virgin olive oil (add more if you prefer a thinner texture)

Directions:

  1. Finely chop all herbs by hand for a rustic texture, or pulse a few times all the herbs in a small food processor for a desired consistency.
  2. Add garlic, cayenne pepper (or red pepper flakes), salt, vinegar, and olive oil.
  3. Mix until well combined. Taste and adjust seasoning to your liking if needed.
  4. Let it rest for 15 minutes to allow the flavors to blend beautifully. 

Storage & Freezer Tip

Chimichurri keeps well in the fridge for up to 5 days in a sealed glass jar.
You can also freeze it in ice cube trays — perfect for adding a cube of flavor to soups, pastas, or veggies anytime. Just thaw at room temperature before serving.
