These are the best pancakes ever! They're easy to make and healthier than your typical pancake recipe because they're gluten-free, dairy-free, and vegan so they'll fill you up without weighing you down and they work for everyone.

Easy Fluffy Banana Pancakes Gluten & Dairy Free

Ingredients

  • 3 ripe bananas mashed (brown dots bananas are best)
  • 1 cup water or plant milk
  • 1 tsp vanilla extract (optional)
  • 2 cups oat flour (make your own by blending 2 cups of oats in the blender)
  • 2 tsp baking powder it's a must

Directions

  1. Option 1, In a large bowl, peel and place 3 ripe bananas. Mash with a fork or potato masher until smooth. Add 1 cup of water or plant milk and 1 tsp of vanilla extract if using. Mix well.
  2. Add 2 cups of flour and 2 tsp of baking powder. Mix until well combined.
  3. Option 2, you can put all the ingredients in the blender and process until smooth.
  4. Preheat the non-stick pan to medium-high. If you are not using a non-stick pan add the oil of your choice for cooking before you pour the batter onto the pan.
  5. Use ¼ of a measuring cup, scoop the batter and pour it into the pan. If your batter is thick just spread the batter evenly with the scooper. Make room for 3 pancakes at a time so it’s easier to flip them over.
  6. Cook them for about a minute on each side before you flip them. You will know when to flip once you see the bubbles and the edges are a little more cooked, a little brown then flip them and cook for about a minute.

You can stack them up if you like and top them with some fruits, berries, a little yogurt, and a drizzle of maple syrup it’s a must for me or whatever you desire.

  • I recommend watching the video above for a visual.
  • This recipe makes about 10 to 15 pancakes of course depending on how big you like them. These are about 3 to 4 inches in diameter perfect size for everyone.
  • I recommend doubling the recipe and freezing them by separating them with parchment paper and store in a Ziplock bag or container. Once you take them out of the freezer you can toast them or microwave them if you wish. Perfect for busy mornings.
  • Stores well in the fridge for 5 days, or freezer for 4 weeks.
