Ingredients

  • 2 very ripe bananas (with brown speckles for sweetness)
  • 1 cup unsweetened shredded coconut

Optional Chocolate Drizzle

  • ¼ cup chocolate
  • 1 teaspoon coconut oil

Directions:

  1. Preheat oven to 350°F (175°C).
  2. Peel the bananas and place them in a bowl.
  3. Mash the bananas with a fork or potato masher until smooth.
  4. Add 1 cup unsweetened shredded coconut and mix well until fully combined.
  5. Line a baking tray with parchment paper.
  6. Use a small cookie scoop or about 1 tablespoon of mixture and place onto the tray.
  7. Leave them as little scoops — do not flatten so they keep their macaroon shape.
  8. Bake for 18 minutes, or until lightly golden.
  9. Remove from the oven and let cool 10–15 minutes.

Optional Chocolate Drizzle

 Double Boiler Method

  1. Place a heatproof bowl over a small pot with gently simmering water (the bowl should not touch the water).
  2. Add the ¼ cup chocolate and 1 teaspoon coconut oil.
  3. Stir occasionally.
  4. ⏱ Time: about 2–4 minutes until smooth and fully melted.
  5. Tip: Keep the heat low so the chocolate doesn’t overheat or seize.
