Ingredients
- 2 ½ cups fresh raspberries or frozen
- ¼ cup chia seeds
- 1/3 cup maple syrup (adjust to taste)
- 1 teaspoon lemon juice
- 1 teaspoon vanilla extract
Directions:
- Mash the raspberries in a small saucepan using a fork or potato masher until they start to break down.
- Cook on medium-low heat (around level 4 on your stove) for about 5–10 minutes, stirring often. The berries will release their juices and start to thicken.
- Add the chia seeds, maple syrup, lemon juice, and vanilla extract. Stir well to combine.
- Simmer gently for another 2–3 minutes until the jam thickens.
- Taste and adjust sweetness — if you prefer it sweeter, add a bit more maple syrup.
