The star of this dish is the homemade creamy Caesar dressing, made with blended cashews, garlic, capers, lemon juice, Dijon mustard, and nutritional yeast. It’s rich, smooth, and packed with umami flavor—without any dairy!

Caesar Zucchini Noodle Salad

Ingredients:

  • 6-7 zucchinis, spiralized
  • Fresh mint (optional, for garnish)

Dressing:

  • 1½ cups cashews (soaked in hot water for 15 min)
  • 1½ cups water
  • 3 garlic cloves
  • 1 tsp capers
  • Juice of 1 lemon
  • 1 tsp Dijon mustard
  • 2 tbsp nutritional yeast
  • ½ tsp dried garlic
  • Salt and pepper to taste

Instructions:

  1. Spiralize the zucchini. If you prefer softer noodles, blanch them in hot water for 30 seconds.
  2. Blend all dressing ingredients in the blender until smooth and creamy.
  3. Pour dressing over zucchini noodles and toss well.
  4. Garnish with fresh mint or other herbs like cilantro or dill.
