Banana Pancakes/Quick, Easy and Fluffy
Jump to RecipeThis is my family's favourite basic pancake recipe! Who knew that vegan, gluten-free pancakes could be so fluffy, flavorful, and yummy. They are quick and easy to make, with only 4 ingredients. The cinnamon and vanilla are optional, but I do recommend them for more flavour.
Banana Pancakes
Yields: 6 pancakes, depends on size

Cooking time: 10 min
Total time: 15 min
Ingredients:
- 2 ripe bananas
- 1 cup plant milk or water
- 1/2 tsp vanilla extract (optional)
- 2 cups oat flour
- 2 tsp baking powder
- 1/8 tsp cinnamon (optional)
Directions:
- Preheat a non-stick pan over medium-high heat.
- Put the bananas in the blender (you can use a hand blender or potato masher if preferred) and blend or mash them until creamy. Then add water and mix.
- Add the rest of the ingredients, and combine until there are no lumps.
- Pour 1/4 cup of the batter at a time into the pan (this makes small/medium-sized pancakes). Cook until bubbles appear, then flip and cook for an additional 1 to 2 minutes.
- Top with whatever you like, fruits, maple syrup, jam, or almond butter. Enjoy!
Tip:
- If you don't have oat flour, you can make your own by blending 2 to 3 cups of whole oats in the blender until oats resemble flour.
