Banana Pancakes/Quick, Easy and Fluffy

This is my family's favourite basic pancake recipe! Who knew that vegan, gluten-free pancakes could be so fluffy, flavorful, and yummy. They are quick and easy to make, with only 4 ingredients. The cinnamon and vanilla are optional, but I do recommend them for more flavour.

Banana Pancakes

Yields: 6 pancakes, depends on size
Prep time: 5 min
Cooking time: 10 min
Total time: 15 min

Ingredients:

  • 2 ripe bananas
  • 1 cup plant milk or water
  • 1/2 tsp vanilla extract (optional)
  • 2 cups oat flour
  • 2 tsp baking powder
  • 1/8 tsp cinnamon (optional)

Directions:

  1. Preheat a non-stick pan over medium-high heat.
  2. Put the bananas in the blender (you can use a hand blender or potato masher if preferred) and blend or mash them until creamy. Then add water and mix.
  3. Add the rest of the ingredients, and combine until there are no lumps.
  4. Pour 1/4 cup of the batter at a time into the pan (this makes small/medium-sized pancakes). Cook until bubbles appear, then flip and cook for an additional 1 to 2 minutes.
  5. Top with whatever you like, fruits, maple syrup, jam, or almond butter. Enjoy!

Tip:

  • If you don't have oat flour, you can make your own by blending 2 to 3 cups of whole oats in the blender until oats resemble flour.
