3 - Ingredient Chocolate Persimmons Pudding

5 very ripe persimmons (cut off the ends) remove seeds unless they are seedless
- Tip: The key is to let your persimmons ripen at room temperature until they are very soft, almost bursting with a jelly-like texture. This can take several days, but the longer they ripen, the sweeter and more flavorful your pudding will be!
- 1/4 cup + 1 tsp cacao powder
- 1/2 tsp vanilla extract
- 1 tbsp maple syrup (optional if you prefer sweeter)
Directions:
- Remove the ends of the persimmons and seeds unless they are seedless. Scoop out the soft flesh or blend with the skin. Ensure they are very ripe for the best flavor and sweetness.
- In a high-speed blender, combine the persimmon flesh, cacao powder, and vanilla extract. Blend until the mixture is smooth and creamy.
- Transfer the pudding to a container, cover, and place it in the fridge. Allow it to chill for at least a few hours or overnight. This step enhances the texture and flavor.
